If using Canada Red Rhubarb you may not need as much sugar.

Directions

  1. Cut rhubarb into chunks.
  2. Combine with lemon and water in a large saucepan.
  3. Bring to a boil and simmer until rhubab is tender.
  4. Stir in lemon juice.
  5. Strain through a cloth.
  6. Stir in sugar and bring to a boil.

I made this cordial. We loved the sweet tartness of this drink. It is reallt good on vanilla ice cream.
