Red Onion Soup

  • Heat 3 tablespoons oil in heavy large pot over med-high heat.
  • Add onions and sauté until brown, about 25 minutes.
  • Sprinkle flour over sautéed onions; stir 2 minutes.
  • Gradually mix in broth, scraping up browned bits from pan bottom.
  • Simmer 15 minutes.
  • Working in batches and using on/off turns.
  • blend soup in processor to coarse puree.
  • Return soup to pot and bring just to simmer.
  • Season with salt and pepper.
  • Ladle soup into bowls.

Cooking is my passion, and I am slowly, but surely beginning to venture into the world of baking. To me, cooking is so much easier because baking is so much more exact. I love to make Italian and Mexican food the best, followed by Chinese and last, but by far the least, good old American food! How can you beat chicken fried steak, mashed potatoes and gravy?? I love to find several recipes and put my own spin on them and create a new recipe.
