- 1 large onion, chopped
- 5 garlic cloves, crushed
- 2 stalks celery, chopped
- 2 tablespoons olive oil
- 12 cups water
- 1 (16 ounce) bag dried red lentils
- 1⁄2 teaspoon ground cayenne pepper
- 1 large red bell pepper, chopped
- 2 small tomatoes, chopped
- 1 1⁄2 teaspoons sea salt
- fresh ground black pepper
- 1⁄2 teaspoon ground fennel
- 2 tablespoons grated fresh ginger
- 1 tablespoon Trader Joe's 21 seasoning salute (seasoning blend)
- 1 tablespoon ground curry powder
- 2 tablespoons butter
- 1⁄2 cup fresh cilantro, chopped
directions
- Saute onion, garlic, celery in olive oil. Add water, lentils, pepper, tomatoes until boiling. After water is boiling, add sea salt, black pepper, fennel seed, 21 seasoning salute, curry powder, and fresh ginger. Boil for about 10 minutes, and then add the butter and cilantro. Boil for about 10 more minutes or until lentils are soft. Turn off the heat and let cool for about 15 minutes.
