Serve this with the Beer and Honey Bread recipe I posted separately.
- 2 tablespoons olive oil
- 2 onions, peeled and sliced
- 3 red capsicums, seeded and sliced
- 1 teaspoon sugar
- salt and pepper
- 2 teaspoons dried basil
- Heat olive oil in frying pan, add onions and saute until soft.
- Add capsicum and cook gently for 30 minutes, stirring occasionally.
- Add sugar, salt and pepper and basil.
- Cook to mix through.
