I absolutely adore lemon bars, but unfortunately most recipes are super sweet with a fake lemony flavor. This recipe, from my mother's Realemon Recipe book, is a sweet-tart version of lemon squares. In my opinion, you can't get better than this.
For the crust
- 2 cups flour
- 1 cup butter
- 1⁄2 cup powdered sugar
For the filling
- 4 eggs (beaten)
- 2 cups sugar
- 4 tablespoons flour
- 1⁄4 teaspoon salt
- 4 tablespoons ReaLemon juice
- Cream together ingredients for crust and press into 9 x 13-inch pan.
- Bake for 20 minutes at 350 degrees.
- Mix together filling ingredients and pour over first layer.
- Bake 25 minutes.
- Sprinkle with powdered sugar while warm.
These little gems are very good! I had lost the recipe years ago and am very happy to see it posted. I had to reduce oven temp. and timing slightly as I used glass cookware and my older oven demands it, lol! Thank you for posting a favourite that doesn't always use chocolate!
Heirloom this is a tasty, simple and easy to follow recipe! Made for a family dinner and it was enjoyed by all. I recommend it to anyone who enjoys Lemon Squares (which are one of my personal favorites). Thanks for posting!
Thanks for posting this! My mom also used this recipe, but her Realemon recipe has been lost for years. These truly are the best lemon bars out there!
