I have not tried this recipe. I got this recipe from The Church Potluck Supper Cookbook.
- 1 1⁄2 cups oatmeal
- 1 3⁄4 cups flour
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 cup walnut pieces
- 1 cup brown sugar
- 1 teaspoon cinnamon
- 1 cup butter, melted
- raspberry jam
- Mix all ingredients, except jam, well, in order given.
- Put 1/2 the mixture on bottom of greased 9"x13"x2" pan. Spread with raspberry jam. Crumble the remaining oatmeal mixture over top of jam.
- Bake at 325 for 30 minutes or until done.
I made these a couple of weeks ago, in a pinch, for a neighborhood cookout. Everyone loved them and raved on and on about them! I am making them again tonight!!!! I use my homemade raspberry jam for these, either 2 small jam jars or 1 of the next size up (think 2 pints or 1 quart).
These rich buttery bars are very quick and easy to make. You could substitute any flavor jam (I used blackberry) and you will need about 1 1/2 cups, or about a 12 ounce jar. You'll need to press down the first layer before spreading the jam on top of it. I cut into rectangles and got 24 servings.
