- 473.18 ml cooked and cooled quinoa (1 cup dry)
- 59.14 ml currants (or dried cranberries)
- 59.14 ml chopped raw almonds
- 118.29 ml diced carrot
- 59.14 ml chopped mint
- 59.14 ml sliced scallion
- 59.14 ml chopped parsley
- 59.14 ml lime juice
- 4.92 ml agave nectar
- 2.46 ml cumin (or less depending on preference)
- 3.69 ml sea salt
- 59.14 ml olive oil
directions
- Put all ingredients in a bowl and toss together with quinoa, adjust seasoning to taste.
- To make a meal out of it, place next to a bed a greens with sliced grilled chicken.
