- 1 cup onion, chopped
- 3⁄4 cup celery, chopped
- 2 teaspoons garlic, minced
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can refried black beans
- 1 (15 ounce) can diced tomatoes and green chilies
- 1⁄2 cup mild thick & chunky salsa
- 1 1⁄2 cups beef stock
- 1 1⁄2 teaspoons cumin
- 1⁄4 teaspoon dry oregano
directions
- Combine all ingredients in a pot, bring to a boil on medium high heat.
- Reduce heat to a simmer and cook for 25 minutes or until vegetables are tender.

My husband, Paul, and I enjoy travel, good food and spending time with family.

I adore greyhounds but don't currently have one. They are sweet, calm dogs. I can highly recommend adopting a retired racer. Update - We did recently adopt a Staffordshire/Shepard mix from a rescue group. He's lovable and sweet, though needs to be much more active than our old greys did.
