Quick and Easy Chocolate Toffee Cookies

This recipe is fast and easy! 4 ingredients... gotta love that! The cookies are between soft and crunchy. Both my kids loved them - a miracle! Great with a cold glass of milk. I think next time I'll add mini-chocolate chips to the mix!

Oh yummy! I swapped out the full amount of oil for fat-free vanilla yogurt and cannot imagine these tasting better...even with all that fat! For the last pan, I decided to add some chocolate chips, in addition to the toffee bits. These were the favorites from all taste testers here. So quick, so easy, so positively delicious! Thanks!

Ingredients Nutrition

  • 425.24 g box chocolate cake mix (I used Betty Crocker Fudge Cake mix)
  • 118.29 ml vegetable oil
  • 2 eggs
  • 226.79 g packageof heath English toffee bits

Directions

  1. Preheat oven to 350 degrees. Mix all ingredients in a bowl until combined. Batter will be thick. Drop by spoonful onto baking sheet. Bake for 12 minutes. Remove from oven and let rest on the baking sheet for 2-3 minutes. Enjoy!
