Quesadilla Pie

"an easy recipe. For an extra zip, you can add hot sausage, and or a couple drops of tabasco."

• Yields: 1 pie
• Serves: 6-8

ingredients

• 1 (4 ounce) can chopped green chilies
• 3⁄4 lb sausage, cooked and crumbled
• 2 cups shredded cheddar cheese
• 3 eggs, well beaten
• 1 1⁄2 cups milk
• 3⁄4 cup biscuit mix
• hot salsa

directions

1. Sprinkle green chilies in a sprayed 9 inch pan.
2. Add layer of cooked sausage, and a layer of cheddar cheese.
3. In a large bowl, mix together eggs, milk, and biscuit mix, and mix well.
4. Pour slowly over chilies, sausage, and cheese.
5. Bake at 350 degrees for 35 minutes, or until center is set.
6. Serve with salsa.

Made this for a late lunch today. It was quick, easy and called for ingredients I always have on hand. DH and picky DS both gave it a solid 4 star rating and ate two helpings. Thanks Weekend Cooker for a good recipe.
