- 2 large eggs
- 236.59 ml pumpkin puree
- 157.80 ml sugar
- 177.44 ml unsweetened applesauce
- 59.14 ml water
- 236.59 ml all-purpose flour
- 177.44 ml whole wheat flour
- 4.92 ml baking soda
- 2.46 ml baking powder
- 2.46 ml salt
- 4.92 ml cinnamon
- 2.46 ml clove
- 2.46 ml nutmeg
- 2.46 ml ginger
directions
- Preheat the oven to 350 degrees.
- Mix together the eggs, pumpkin, sugar, applesauce, and water.
- In a separate bowl mix together the flours, baking soda, baking powder, salt, cinnamon, cloves, nutmeg, and ginger.
- Stir the dry ingredients into the wet just until mixed.
- Spoon into greased or paper-lined muffin pan.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
