  • Combine 2 cups sugar and eggs in mixer bowl; beat until thick and lemon colored.
  • Add oil, pumpkin, and 1 teaspoon of vanilla; mix well.
  • Add flour, baking soda, baking powder, cinnamon, ginger, cloves, and salt; mix well.
  • Drop by teaspoonfuls on lightly greased cookie sheet.
  • Bake at 350F for 12 to 15 minutes or until light brown.
  • Remove to wire rack and cool.
  • Combine pudding mix, 1 cup of sugar, milk, shorting, and 1 teaspoon of vanilla in mixer bowl.
  • Beat until spreading consistency.
  • Spread on half the cookies and top with remaining cookies.

  1. I made this filling and the fillings for the other two recipes, to audition them all. I liked this recipe, but made a change in it...I used 1/2 cup of Splenda for the sugar. It was plenty sweet enough when put between two cookies. I will definitely add this to my "favorite" file.
     
  2. I made these at Thanksgiving and they were such a hit I made them for Christmas and added red and green food coloring to the filling. I will be posting a photo shortly. GrandPa Bill
