  1. Preheat oven to 350 degrees.
  2. Prepare muffin tins with cooking spray and flour.
  3. In a mixing bowl, combine pumpkin, applesauce, egg white, and juice.
  4. In another bowl, combine sugar, flour, baking soda, baking powder, salt, ginger, and nutmeg.
  5. Mix wet ingredients with dry ingredients just until moistened.
  6. Use an ice cream scoop to fill muffin tins 2/3 full.
  7. Bake for 25 minutes.
