A tasty healthy muffin from Go for your life. A great way to sneak a serve of vegies into the kids too! I used Splenda in place of sugar & I didn't have walnuts so added some flaxseeds instead, & it didn't stop toddler DD eating them!!

  1. Combine pumpkin, apple sauce, sugar, vanilla essence and egg whites and then add remaining ingredients.
  2. LIghtly grease a muffin tin & divide mixture evenly to make 12 muffins.
  3. Bake at 180.C for 15-20 minutes.
