  • Salt and freshly ground black pepper.
  • Wrap the flat head fillets in the prosciutto with parsley.
  • Fry them in little olive oil until just done.
  • Prepare the salad dressing and toss the vegetables.
  • Place the fillets on top.
  • Garnish with pine nuts.
  • Sprinkle with vinegar.
