- 14.79 ml olive oil
- 113.39 g chorizo sausage, remove casing (or soy chorizo)
- 1 large onion, chopped
- 2 (226.79 g) packet soy crumbles (or 1 lb. ground beef)
- 2.46 ml salt (to taste)
- 3 garlic cloves, finely chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 jalapeno pepper, finely chopped
- 2 celery ribs, chopped
- 236.59 ml corn
- 7.39 ml chili powder
- 7.39 ml cumin
- 4.92 ml coriander
- 236.59 ml beef stock (or vegetarian stock)
- 396.89 g can diced tomatoes
- 396.89 g can chili beans
- 226.79 g can tomato sauce
- 236.59 ml elbow macaroni (variation -- substitute barley for pasta)
directions
- Heat oil in dutch oven.
- Add chorizo, break up into pieces and stir while cooking. If using real ground beef, add at this point.
- Add and saute onions, peppers and celery until softened. Add garlic and salt.
- Add corn, spices and soy crumbles (if using); stir to combine.
- Add beef stock, beans, pasta, tomatoes and tomato sauce.
- Simmer until pasta is cooked.
- Check periodically and add water and stir as needed.
- Garnishes: sour cream, chopped onion, shredded cheese, black olives etc.
