Syrup
- 118.29 ml sugar
- 14.79 ml cornstarch
- 0.61 ml cinnamon
- 177.44 ml water
- 9.85 ml lemon juice
- 236.59 ml fresh blueberries or 236.59 ml frozen blueberries, thawed, drained

- 315.37 ml instant mashed potatoes
- 236.59 ml flour
- 9.85 ml baking powder
- 2.46 ml salt
- 532.32 ml skim milk
- 14.79 ml oil
- 2 eggs
directions
- In medium saucepan, combine sugar, cornstarch and cinnamon; stir in water and lemon juice until smooth.
- Over medium heat, bring to a boil, stirring constantly.
- Stir in blueberries; reduce heat.
- Simmer about 3 minutes or until thickened, stirring occasionally.
- Remove from heat; set aside.
- Heat waffle iron.
- Lightly spoon flour into measuring cup; level off.
- In large bowl, combine potato flakes, flour, baking powder and salt. Add milk, oil and eggs; stir until blended (batter will be lumpy).
- Bake in hot waffle iron until steam stops and waffle is golden brown.
- Serve with warm blueberry syrup.
