  • Fry bacon until crisp, remove from pan and saute onions until translucent. Drain bacon grease.
  • Boil potatoes in water and salt until fork tender - no need to drain.
  • Add pepper, onions, cream of chicken soup and milk. I usually put in the crock pot at this point to heat up and keep warm.
  • If rushed for time, you can heat this on the stove.
  • Just before serving, add crispy bacon and sour cream.

  1. Followed the directions exactly, though doubled. Very very thin. It cooked all day in the crock pot. Had an ok flavor. Will look for another potato soup recipe.
     
  2. Hi Connie, what a very good soup this is, we love soup in our house we have it every day, so it's good to have a new one to try and I am glad I did. I made this exactly as you said and made it in my crock pot and it was so nice to come home from work to a hot bowl of soup, I just work three hours so it was great timing. very tasty and I will make it again. I retired two years ago and thought I would have more time to devote to baking and cooking - not so much. The time just goes by so fast. My husband and I enjoy traveling, spending time with family and friends and especially spending time with our three little dogs and one cat.
