- 2 lbs raw potatoes, peeled
- 1 tablespoon salt
- 2 tablespoons flour
- 3 eggs, separated
- 1 cup milk or 1 cup cream
- fat (for frying)
directions
- Grate raw potatoes into a bowl with cold water. Squeeze through a clean cloth. Add salt, flour, egg yolks and milk, and mix in stiffly beaten egg whites. Drop by Tblsp. fulls into a frying pan with hot fat. Bacon fat is nice. Fry pancakes until golden and crisp.
