Good light meal on a hot summer's evening when you don't want to turn on the stove.
- 2 cups cooked chicken
- 1⁄2 cup tosted slivered almonds
- 2 teaspoons lemon zest
- 2 garlic cloves, minced
- 1 (15 ounce) can cannellini beans, drained and rinsed
- 3 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
- 1⁄2 cup sliced olive
- Combine everything and toss well.
