This creamy sweet-tart dressing came from Pollis on the Beach in Maui, Hawaii. It will make almost any salad special.
- 1⁄2 cup vegetable oil
- 1⁄4 cup cashews
- 1⁄4 cup water
- 3 tablespoons honey
- 1 tablespoon fresh lemon juice
- 2 teaspoons white vinegar
- 1 1⁄2 teaspoons light soy sauce
- 2 cloves garlic
- Mix all ingredients in blender until very smooth.
- Store in jar in refrigerator.
Really good dressing. I like how the soy and cashews give it a unique flavor, almost tahini like. We like our dressing tart, so I omitted the honey and added quite a bit more lemon. I think you could put this dressing on any kind of green salad, as well as one that has chicken, etc. on it - it is quite versatile.
To clarify: I'm born & raised on Maui, it's not called Polli's on the Beach as the restaurant is located far from the beach on the side of Haleakala crater. It's just Polli's Restaurant. I had their house made authentic recipe and lost it years ago when I moved, so have been searching the net for another one and can only find this one. The original had cashews, garlic & honey, forgot what else... but it definetly had 'dill' which this one is missing. So be sure to add dill to this recipe for an awesome experience!
Excellent Dressing. This is sweet dressing and I served it over romaine and red peppers. Next time, I will serve it over a green salad with mandarin oranges and glazed nuts. Terrific!
