  • 1 tablespoon butter
  • 12 chopped onion (cup)
  • 1 teaspoon minced garlic
  • 3 water (cup)
  • 1 salsa, I used black bean and corn thick (container) or 1 chunky salsa (container)
  • 2 (14 ounce) pinto beans with liquid, I used a quart of pinto beans I had canned
  • 12 chopped red pepper (cup)
  • 1 bay leaf
  • 2 tablespoons , instant veggie stock mix
  • 14 teaspoon pepper

directions

  • Garnish.
  • Tortilla strips fried in oil till crispy.
  • Grated cheese.
  • Melt butter in pot, saute' onion and garlic until soft. Add next 7 ingredients. Bring to a boil then reduce heat and simmer 1 hours.
  • Remove bay leaf before serving.
  • Garnish with strips and cheese.
