- 4 cups dried pinto beans
- 4 slices thick slab bacon, cut into 1 inch slices
- 1 teaspoon salt
- 2 teaspoons black pepper

Optional seasonings
- chili powder
- cayenne pepper
- garlic powder
- oregano

Optional garnishes
- sour cream
- fresh cilantro
- chopped red onion
- grated cheese
- pico de gallo
directions
- Rinse beans well and place in a large pot with the bacon; pour water over the top.
- Use enough water to cover the beans by 1-2 inches.
- Bring to a boil over med-high heat, reduce heat to low and cover; simmer 2-3 hours.
- If liquid seems to evaporate to quickly, add more water during cooking process.
- Beans are done when tender without much bite to them.
- Add salt and pepper, stir, and taste.
- Adjust seasonings as necessary, add in other seasonings as desired.
- Serve with garnishes of choice.

I am a Colorado ski bum at heart, but am currently stuck in Miami, FL of all places working on my Doctoral degree in physical therapy at UM. I can't wait until I graduate and can get back to the mountains! 2 more years, 2 more years...I love to cook and find it a great way to relax and slow down after classes and I can't wait until I have more free time to be able to do it.
