This is a GREAT snack and very good for you. Created by my husband.
- 1⁄2 cup cottage cheese
- 1⁄4-1⁄2 cup pineapple chunk
- 1 -2 tablespoon pineapple juice
- unsalted sunflower seeds
- dried cranberries
- Mix all together.
- Be happy.
I always have pineapple with cottage cheese but never thought of adding sunflower seeds and craisins. I was really surprised how well the sunflower seeds tasted mixed in! I used roasted salted. This recipe is a keeper! Thanks for sharing!
Made this for our Sunday lunch/appie, it was quite delicious, DH would like to have it often. Lovely combination of textures and flavours. I will be making it often, it will be nice especially on a hot summer day for a light lunch. Thanks for posting. sept 24/09 I do make this on a regular basis, it does make a nice light lunch, I had a lovely fresh pinapple this time, great fresh taste !! did some new photos this time.
Found this to used up half a can of pineapple tidbits and some leftover cottage cheese. Full of protein and fruit! It served two of us for dessert last night - I didn't have sunflower seeds, but it was great without!
