FANNNNNTASTIC!! The only changes I made were to add the ginger to the butter 1st to soften & infuse more. And I cut the sugar by half; the pineapple was sweet enough. I served this with recipe#433645 & they went wonderfully together. This would be equally excellent as a dessert topping. Quick & easy. Definitely a keeper! Made for ZWT9, Mike & the Appliance Killers.

I made this using a whole pineapple & must say that there are a least 6, & perhaps more like 8, servings from this recipe, especially if you have it for dessert after a big meal or as topping on a slice of pound cake (or ice cream)! However, that aside, this compote is delicious & well worth making again!! Definitely a winner! Thanks for sharing the recipe! [Made & reviewed in the Almost 5 Special Event]

I used a half of a fresh pineapple to make this and followed the directions as written. Very tasty! I used it as a topping on waffles with a layer of cream cheese and some whipped topping. Next time I'll try it on ice cream as part of a banana split. Thanks for sharing. Made for ZWT7-Pacific Islands.
