Pineapple Beets

- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1⁄4 teaspoon salt
- 8 ounces pineapple tidbits
- 1 teaspoon butter
- 2 tablespoons lemon juice
- 1 (16 ounce) can sliced beets
directions
- Drain sliced beets and cut into half pieces Set aside.
- In a medium saucepan combine sugar, cornstarch and salt. Stir in pineapple and juice. Cook on low heat, stirring constantly until mixture thickens and bubbles.
- Add butter, lemon juice and beets. Cook an additional 5 minutes until heated through.
- Serve and enjoy!

<p>Thanks for taking the time to stop by My Page! I am married to a quiet, but fun loving guy who cleans up the kitchen!! I have grandchildren who I adore. I am retired from being a paralegal and a real estate agent. I have also been a substitute teacher for the elementary grades in the public school system. I enjoy baking desserts most of all. I also enjoy games on my laptop, growing flowers, lunches with friends, babysitting grandchildren, photography and traveling.
