- 2 tomatoes, diced
- 1 onion, finely chopped
- 2 limes, juice of
- 29.58 ml cilantro, finely chopped
- 1 jalapeno pepper, seeded and minced
- salt & pepper
- In a small bowl, combine tomatoes, onion, lime juice, cilantro, jalapeno, salt and pepper.
- Nice addition to cheese quesadillas, burritos and salads.
EXCELLENT side dish to any Mexican dinner. Served it along side Cuban Ropa Vieja and Most excellent Mexican Rice. Nice fresh flavors. Thanks for the great recipe.
Essential part of a Mexican dinner, and this is the way to do it. Simple, fresh, bright and colorful. We served this with chips, then added it to guacamole, then used it on enchiladas.
