  1. Beat the egg yolks.
  2. Add the sugar and salt slowly, beating constantly, until lemon colored.
  3. Add the banana and potato flour while beating.
  4. Beat the egg whites until stiff, and slowly fold into the banana mixture.
  5. Bake in a tube pan for 45 minutes at 350 degrees F.

An interesting cake from an easy-to-follow recipe! I was tempted to make this in a loaf pan [shades of banana bread!], but I didn't! The resulting cake was refreshingly mellow, & I did top it off with a simple date sauce that I make for ice cream, fruit, etc. This cake was well received after a very elaborate dinner! Many thanks for the recipe!
