An interesting cake from an easy-to-follow recipe! I was tempted to make this in a loaf pan [shades of banana bread!], but I didn't! The resulting cake was refreshingly mellow, & I did top it off with a simple date sauce that I make for ice cream, fruit, etc. This cake was well received after a very elaborate dinner! Many thanks for the recipe!

- Beat the egg yolks.
- Add the sugar and salt slowly, beating constantly, until lemon colored.
- Add the banana and potato flour while beating.
- Beat the egg whites until stiff, and slowly fold into the banana mixture.
- Bake in a tube pan for 45 minutes at 350 degrees F.
