Peruvian Beef Kabobs with Pepper Sauce

  • To make beef, combine all beef ingredients in a bowl.
  • Toss well.
  • Cover and chill to marinate for 3 hrs.
  • Combine rub ingredients.
  • Prepare grill.
  • Place beef on metal skewers.
  • Rub the rub all over the meat.
  • Grill for 6 min.
  • turning over one time.
  • Alternately, you could broil the meat in the oven.
  • Just make sure it is done enough for your tastes.
  • To make pepper sauce, broil the pepper halves until they begin to blacken.
  • This should take about 15 minutes.
  • Place them in a ziplock bag (a sturdy one that won't melt) and seal it.
  • This will let the skins come loose.
  • Peel the skins off and chop up the pepper.
  • Put the pepper chunks and remaining sauce ingredients in a blender and grind up until smooth.

  1. 5 stars all the way! This is simply addicting. The steak is well seasoned and the yellow pepper sauce compliments it so nicely. I use Penzey's hungarian paprika which is a bit hotter than your average. It gives it that extra punch. Yummy yum yum.
     
  2. Really delightful recipe! The vinegars give it a great bite! Can't go wrong with the spice mix here either. I marinated the meat for 24 hrs (because I had started rather late the night before and was too hungry to wait 3 hours! so I left it in the fridge till next day). Did everything else as directed, served over jasmine rice. I'll definitely make this again. Thanks!
