Perfectly Peppermint Brownies

I found this recipe on the back of the bag of York Mint Peppermint Patties (premier baking pieces) and I posted it here so that I didn't lose it. Can't wait to make these!

These taste great! I was worried that the mint might be too strong, but it wasn't. I had a problem with the brownies sticking to the pan really bad even though the pan had been greased, and I'm not quite why that happened.

  1. Preheat oven to 350 degrees.
  2. Grease a 13 x 9 x 2 inch baking pan.
  3. Stir together cocoa and baking soda in large bowl.
  4. Stir in 1/3 cup of the melted butter.
  5. Add boiling water and stir until the mixture thickens.
  6. Stir in sugar, eggs and remaining 1/3 cup of the melted butter; stir until smooth.
  7. Add flour, vanilla and salt; blend completely.
  8. Stir in peppermint patties.
  9. Spread in prepared pan.
  10. Bake 35-40 minutes or until the brownies begin to pull away from the sides of the pan.
  11. Cool completely in pan on wire rack.
  12. Cut into bars.
