Pepper Jack Potatoes

"This is a nice difference from baked potatoes and makes a very good tasty side dish. Taken from the drawer of my mother in laws recipe box."

  • Combine potatoes and onions.
  • Mix together butter and spices, drizzle over potatoes and onions.
  • Toss to coat.
  • In a 2 quart oval with flat bottom (or something similar) dish spread half the potatoe mixture top with half the cheese repeat one more time.
  • Bake 40-45 mins in 400 degree oven uncovered.
  • *I did not have any pepper jack cheese but did have some peppers and jack cheese so i chopped up the peppers grated the jack cheese and subbed this for pepper jack cheese.

  1. These are the bomb. A nice change of pace for potatoes. They were not too spicy, but had a real nice mildly hot kick to it. Next time i might add more chayenne and chili powder, cuz i like my stuff pretty hot, but feel that it has perfect heat for most people. Thanks alot for the recipe!!!!
     
  2. This has potential, but didn't quite work right for us. The potatoes still weren't quite cooked enough after being in for an hour and 15 minutes. Also, the next time I try this, I'll just buy a bag of hash brown potatoes and let them thaw out, instead of wasting time cutting potatoes into tiny cubes. Good taste, but we have to find a way to cook them more fully, without just leaving them in the oven forever.

  4. I made this as a side dish for Recipe #123859, and it was a good combination. I baked it at 350° for 1 hour alongside the roast and they came out great. Made for Alphabet Soup Game. Thanks for posting Shirley!
     
  5. I truly thought we'd like this better than we did. I thought maybe it's just me (my stuffy head affects my sense of taste), but my DH wasn't that crazy about them either--and he LOVES potates. I do plan to try them again, but with some adjustments. First, I'll try skizzling both the potatoes and the onions initially--the former because the potatoes didn't were underdone even after an extra 15 minutes, and the latter for flavor. If that doesn't do it, I'll try parboiling the potatoes or using frozen hash browns or something, and substitute sliced scallions for the onions, adding them after cooking. If neither of those do it, I'll have to think about it! The biggest problems were: underdone despite extra cooking time, lack of flavor (not spiciness, though), and they were kind of dry. I'll post results of my experiments when I've made them. Thanks, Shirley!

  2. Everyone loved these potatoes, I have made them twice now. If you want a real treat, substitute garlic salt for reg, and leave out the cayenne pepper, it's a party in your mouth, awesome ! Thanks for posting, Shidal.

I live in a small rural town in central California. I am lucky enough to live and work in my community. I am the site coordinator for an after school program where we enroll over 100 students. My motto is there are no bad kids only bad parents. I have one daughter that is now in her second year of college and a husband that is the worse critic when it comes to food. Trying to convince myself that it is only $2.00 a month and I could clean up that nonmember cookbook and get it organized so I might be able to find something :)I'm kinda a pack rat when it comes to food, I always have back ups and sometimes back ups for the back ups. My husband always tells everyone if there is a national disaster come to our house shirley will be able to feed an army.
