Buttery Garlic Potatoes

- 6 small red potatoes, quartered
- 1⁄4 cup butter, melted
- 1 teaspoon seasoning salt
- 1 teaspoon paprika
- 1 teaspoon dried parsley flakes
- 1 teaspoon minced garlic
directions
- Place the potatoes in a 2 quart microwave safe dish. In a small bowl, combine the butter, seasoned salt, paprika, parsley and garlic; pour over potatoes and toss to coat.
- Microwave, uncovered, on high for 8-10 minutes or until potatoes are tender, stirring frequently.

My 6 year old son is usually extremely picky about his potatoes.. He'll eat mashed potatoes and french fries EVERY DAY if given the opportunity, but when I've tried putting other potatoes in front of him he pushed them away every time.. I upped the garlic in this recipe and urged him to try one and let me tell you, he went back for THIRDS! I'm actually about to start making them right now, I am going to roast them this time because they seemed to take FOREVER in my microwave (perhaps because I doubled the recipe). But YUM YUM YUM!!!
