- 4 -6 lbs tuna, loin
- 1 teaspoon crushed chipotle pepper
- 1 1⁄2 teaspoons salt
- 1 tablespoon cracked peppercorn
- 1 tablespoon thyme

For the Horseradish Tequila Cream
- 1⁄2 cup prepared horseradish
- 1⁄2 cup heavy cream
- 1⁄2 cup sour cream
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 fluid ounce tequila
directions
- Mix the chipotle pepper,salt,pepper corns and thyme together well. Roll the tuna loin in the mixture so it is well coated and sear on a flat grittle or large frying on medium heat about 5 minutes each side.
- Pour the Horseradish Tequila Cream over the tuna, slice thin to serve as a appentiser. Serve Hot!
