Penne with Three Cheeses

ingredients
- 8 ounces ricotta cheese
- 1 cup half-and-half or 1 cup cream
- 1 teaspoon chopped garlic
- 1 medium tomatoes, coarsely chopped
- 1⁄4 cup chopped cilantro
- 1 tablespoon hot pepper flakes or 4 chile tepins, crumbled
- 1 cup grated mozzarella cheese
- 1⁄4 cup grated parmesan cheese
- 8 ounces penne pasta, cooked and drained
- 1⁄4 cup chopped parsley, for garnish
directions
- Mix the ricotta, cream and garlic together.
- Put in a pan with the tomato, cilantro and pepper flakes.
- Warm over medium heat, then add the mozarella and 2-3 Tblsp of the parmesan.
- Heat over low heat until the mozarella is melted.
- Add the cooked penne to the pan and heat gently, mixing carefully.
- Serve in wide soup bowls.
- Garnish with chopped parsley and reserved parmesan.

This was delicious! I made it for us three kids this evening and there was plenty for us all. Because I was making it just out of what I had around the house; I didn't make it with cilantro or tomatoes. To make up for that I added the parsley in for the cilantro. Also, after it had been served we added some more cheese which helped make it gooier and delicious! Thanks for an easy, delicious meal!

Very good presentation and the ricotta cheese blends nicely, except a few changes might need to be made for some eaters--the cilantro flavor is a little too strong, and I do love cilantro. Basil might be better, less overpowering. And 1 tablespoon of hot pepper flakes is a lot of spice! My husband made it with 1 teaspoon, and the dish had a definite kick. He put in the bacon and topped it with sauteed shrimp, both special touches. A cook might try playing around with the seasoning to suit her family's or guests' taste. Thanks for sharing, Junebug!

I am a wife, Mother and Grandmother. I am a native Texan and can't imagine living anywhere else. My Grandmother taught me to cook before I could see the top of the counter. I remember standing on a stool in her kitchen learning to make pancakes. My Mother loved to cook and it seems she was cooking (or cleaning) most of the time. So those are the two ladies responsible for nurturing my love of cooking!

As you can see I cook and review recipes more than I post them. That's because I am a pinch of this and a dollop of that cook and it's hard to put those recipes down on paper.
