- 8 ripe peaches, coarsely chopped (about 3 pounds)
- 1 small red pepper, cut into 1/4 inch dice
- 2 green onions, chopped
- 1⁄4 cup peach jam or 1⁄4 cup apricot jam
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- In large bowl, toss ingredients until combined.
- Cover and refrigerate until ready to serve or up to two days.
