    • 8 ripe peaches , coarsely chopped (about 3 pounds)
    • 1 small red pepper , cut into 1/4 inch dice
    • 2 green onions , chopped
    • ¼ cup peach jam or ¼ cup apricot jam
    • 2 tablespoons balsamic vinegar
    • 2 tablespoons olive oil

    Directions:
