I found this recipe at www.newmansown.com. I"m posting it here to try in the future. I haven't had much luck making guacamole so maybe this will be a good substitute!
- 4 ounces cream cheese
- 1 avocado
- 1⁄2 cup corn kernel (thawed if frozen)
- 16 ounces mild chunky salsa
- 1⁄4 chopped cilantro
- Spray a knife with cooking spray, then cut cream cheese into small cubes. Scatter around bottom of serving dish. Peel and pit the avocado, then cut into cubes. Add to serving dish along with the corn kernels. Pour salsa over, covering all. Scatter cilantro over the top.
- Serve with tortilla chips or pretzel crisps.
This dip got mixed reviews at a family get together. I think more people would have liked it if I made the cream cheese and avocado pieces smaller. Next time I'll try to cut the cream cheese and the avocado to be about the same size as the corn kernels.
We loved the southwestern flair to this. We have hardly had avocado in dips, though this is a nice fit for the game. Full of flavors, and enjoying this with the rest of the family, with some pretzel sticks. Made for PRMR tag.
