- 453.59 g tomatoes, vined ripened (plum or Cherry)
- 59.16 ml olive oil
- 3 garlic cloves, chopped
- 1 sprig rosemary, leaves finely chopped
- 4 sage leaves, shredded thinly
- 0.25 ml dried chili pepper flakes
- 56.69 g capers
- 113.39 g black olives, pitted
- 113.39 g anchovies packed in oil, drained and chopped
- 29.58 ml oregano, chopped
- 453.59 g spaghetti
- 14.79 ml flat leaf parsley, chopped
- salt & freshly ground black pepper
directions
- Bring 3.4 litre/6 pint water and 2 tbsp salt to the boil for the pasta.
- For the sauce, squeeze the tomatoes into the sink to get rid of most of the juice, then cut each one in half.
- Heat the oil in a pan with the garlic, rosemary and sage and cook gently for about 1 minute without browning.
- Add the chilli, tomatoes, capers, olives, anchovies, oregano and some black pepper and leave to simmer gently for 10 minutes.
- Meanwhile, add the pasta to the pan of boiling water and cook for about 7 minutes or until al dente.
- Drain and tip it into a large warmed serving bowl. Pour over the sauce, add the chopped parsley and toss together well. Serve straight away, with plenty of red wine.

<p>I will start by saying that I love to cook and also love collecting recipes so I am very happy to have joined Recipezaar and really enjoy going through all the recipes that have been generously posted by other members. <br /> <br />I only cook for myself during the week but on weekends I usually have 2 meals to prepare for family and friends. I am on WW and try to keep my choices in line with WW but will indulge myself and save a few recipes that don't fit in with WW for special occasions. My favourite food is curry and am always on the look out for a new curry <br />recipe. <br /> <br />I love to garden as my Zaar name would indicate, I grow tomotoes and herbs but space is limited so mostly I have perennial and annual flowers and plants. <br /> <br />My baby is a lovely little ShihTzu X Poodle named Rosie, she is my only child so of course is spoiled rotten.
