• 1 1⁄2 cups all-purpose flour, sifted twice or more (200 g)
• 3⁄4 cup potato starch, plus
• 1 tablespoon potato starch (100 g total)
• 1⁄2 cup sugar (100 g)
• 1 pinch salt
• 7⁄8 cup unsalted butter, at cool room temp and malleable (200 g)
• 1 teaspoon vanilla extract
• 1 lemon, zest of, grated
• 1⁄2 orange, zest of, grated

directions

1. follow the directions for pasta frolla 1, recipe 71610.
2. roll out to 1/8 to 1/4 inch thick.
