A kicked up version of mashed potatoes. Prep time does not include the boiling of the potatoes.

- salt & pepper

- 8 ounces sour cream
- 8 ounces cream cheese
- Peel and cut up potatoes; boil until tender. Drain. Season with salt, pepper and butter; whip using milk if needed. In separate bowl beat together sour cream and cream cheese until well blended; add to potatoes.
- Beat all ingredients until light and fluffy.
- Pour in to buttered 2 quart casserole; dot with additiona butter if you like and sprinkle with paprika. Bake 325º oven for 30 minutes.
I used half of the sour cream and half of the cream cheese. I mixed all together and sprayed Pam and baked. These potatoes were very good.
Creamy and fluffy....even with reduced fat sour cream and cream cheese. I added some extra milk. This recipe is a keeper. Thanx for posting it.
This is much better than plain old mashed potatoes. I did use 2% milk, and fat-free sour cream and cream cheese to make it more diabetic friendly and it turned out great. A real treat, and I will be making these again. Thanks for posting Cindi!
