- 2 1⁄2 cups orzo pasta
- 1 garlic clove, minced
- 1⁄4 cup chopped red onion
- 1⁄4 cup freshly chopped fresh parsley leaves
- 1 lemon, zested and juiced
- 1 tablespoon olive oil
- 1⁄4 cup freshly grated parmesan cheese
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon fresh ground black pepper
directions
- Cook orzo as directed on package.
- In a large bowl, toss together orzo with remaining ingredients. Can be served warm or chilled.

What a lovely side to our salmon dinner tonight! Just the right fresh balance of flavors and so easy to throw together. We had it hot, but will try it room temp tomorrow.
