Parmesan Crusted Lamb Cutlets

- 12 lamb cutlets
- 14.79 ml olive oil
- 236.59 ml fresh sourdough breadcrumbs
- 1 lemon, zest of, grated
- 14.79 ml fresh rosemary leaf, chopped
- 29.58 ml pine nuts, roughly chopped
- 236.59 ml parmesan cheese, shredded
directions
- Place lamb cutlets on a tray lined with baking paper. Lightly brush with olive oil.
- Combine breadcrumbs, lemon rind, rosemary, pinenuts, and cheese.
- Press breadcrumb mixture ontoo lamb, and bake at 180C for 10 minutes or until topping is crisp.

We greatly enjoyed these with Cooks4_6's Recipe #183993 and steamed broccoli. I scaled the recipe back for two and varied it only by adding 2 cloves of minced garlic and using a rosemary/sage blend from a grinder instead of the fresh rosemary leaves, simply because this was easier for a week night meal. I'm sure the fresh rosemary would have been even more delicious. Loved the lemony flavour and the pine nuts and - for our taste preferences - the garlic. A wonderfully quick meal to prepare. Well..about me! I'm married, I have 2 kids (both boys), and I live in Australia.
I have loved cooking for as long as I can remember, and have become completely addicted to browsing through Zaar looking for new recipes!
I have a small animal shelter for rabbits and guinea pigs, and spend most of my time looking after kids or critters!.
My favourite cookbooks are The Essential Pasta Cookbook, The Central Cookery Book, Flo Bjielkie-Peterson's Country Cookbook, and Greek Cooking (I bought that one in Greece, and it's FANTASTIC). At the minute, we are getting ready to move, which is forcing me to sort through my recipe cabinet. I have been trying out all those recipes that are scribbled on pieces of paper, or torn from magazines, so I can decide ifthey are keepers or not. So far I've found a lot of keepers, and will work at posting them on here.
I'm passionate about a lot of things, mainly my kids, animals, and cooking.
I won't even start on my peeves, we'll be here all night! lol
