directions

  • Toss chicken pieces with flour, italian seasoning, salt and pepper.
  • Heat 2 T butter in large skillet.
  • Add chicken and stir-fry to a golden brown.
  • Remove chicken and keep warm.
  • To skillet add half and half, peas and tomato.
  • Cook and stir for 2 minutes.
  • Add parmesan cheese.
  • Add 1 T butter.
  • Return chicken to skillet.
  • Toss with pasta.

  1. Hi Inez; Made your Parmesan Chicken Skillet last night and it was delicious, simple and easy to make. I used 1 chicken breast and 10 chicken wings and WOW!! The sauce was exceptionally good. I substituted and used RIGATONI. The sauce lined the inside of the rigatoni, EXCELLENT. Thank you for posting your recipe. Oh yes, served ROSSO GRANDE red wine that I make. "Uncle Bill"

  3. The smell of the Italian seasoning and chicken frying was a tempting aroma in itself! Loved the cream sauce I doubled the Parmesan cheese. Very satisfying not to mention quick and easy to make. Once again, Inez to the rescue with another winner for our family.

  5. I didn't want to leave you at 13 reviews in case you were superstitious! I'm not, my house # is 13 and I have 2 black cats. I love food that tastes as good as it looks. Picture chicken and angel hair pasta covered with a cheese flavored white creamy sauce with bright green peas and chopped ripe red tomatoes. The short cooking time is enough to combine the flavors without losing the fresh colors. The key ingredient is the Italian seasoning. It accents the other flavors while adding a piquancy of it's own. I would only suggest adding salt to the sauce and extra cheese to top each serving.

  1. This was wonderful! My fiance and I ate it up for our "sweetest day" meal (it's a thing we only have in Ohio.. like Valentines.. but more commercial)! Anyway, I made it with 3/4 of a lb of chicken tenderloins and added some paprika and garlic powder to the flour mixture. Substituted the frozen peas for fresh zucchini and added a large clove of chopped garlic and about a 1/4 cup extra parm. before adding the chicken back. Fi LOVED it and we are so looking forward to eating the little bit we had left over! Thanks for a great recipe! Def. a "keeper"
     
  2. This recipe gets 5 stars from me for ease of put-together, unique and TASTY flavor, inexpensive, and it offers a LOT of wiggle room for "playing" with the ingredients. LOVED this and the picky family loved it, too. Not to mention, I had to double the recipe, so we have leftovers for tomorrow. Just a note, I added a bit of red wine to the chicken while sauteing and used a packet of Italian Dressing powder in place of the "Italian seasoning". I also added a bit more Basil and Oregano, but that's just personal preference. Ty for posting! This is a keeper!
     
  3. My family loves this recipe! I used sliced zucchini instead of the peas and substituted rigatoni for the angel hair pasta. SO GREAT!
     
  4. This was wonderful. I subbed broccoli for the peas and red bell pepper for the tomato because that's what I had on hand and I don't think it made any difference with final results. I also added about a teaspoon of garlic because we love garlic. I served it with warm french bread and a green salad. I know I'll be making this again. Quick and easy with wonderful results. Thank you.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
