- 1⁄3 cup Dijon mustard
- 1⁄4 cup apple juice
- 1 garlic clove
- 1 cup soft fresh breadcrumb
- 2⁄3 cup grated parmesan cheese
- 1⁄4 cup finely chopped parsley
- 4 chicken breasts
- 1⁄3 cup vegetable oil
directions
- Preheat oven to 200degC (180degC fan forced).
- Whisk mustard, juice and garlic in a shallow bowl.
- Combine breadcrumbs, parmesan and parsley on a large plate.
- Dip chicken in mustard mixture, then in breadcrumb mixture to coat evenly. Place on a plate. Cover with plastic food wrap, chill for 15mins.
- Heat oil in a large frying pan over moderate heat. Cook chicken for 1-2mins each side or until golden brown. Transfer to a baking tray. Bake for 10mins or until cooked.
- Serve with salad and roast baby potatoes or whatever takes your fancy.
