This salad has wafer-thin onion slices (cut on a mandolin) and juicy Greek olives. Posted for ZWT 4.
- 2 large oranges, pared and thinly sliced
- 2 cups lettuce, shredded
- 1 large onion, thinly sliced
- 8 Greek olives, sliced
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1⁄8 teaspoon salt
- 1 dash ground red pepper
- Arrange orange slices on lettuce; top with onion and olives.
- Shake remaining ingredients in tightly covered container; drizzle over salad.
This salad is just plain awesome!!!! I love the sweet oranges paired with the onions and olives!!! I used a mandolin to slice my onions and oranges super thin and that really makes a difference on flavor!! I love the flavor of the dressing, it is just right with these ingredients because it lets their flavors come through without overpowering them! Will definitely make this one again and again, thanks!!
I followed chef Kate and added a little fresh oregano and crumbled feta over the top. I love the combination of the sweet oranges and the salty olives. I used a little less onion for personal preference. A nice light salad. Made for ZWT 4 by a Jefe de la Cocina.
I love orange salads and am so happy to add this to my collection. I threw in some fresh oregano with the greens and sprinkled some feta over the top. A perfect little salad!
