ingredients
- 2 cups flour
- 1⁄3 cup sugar
- 1 teaspoon baking powder
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon baking soda
- 1 cup Grape-nuts cereal
- 2 eggs, slightly beaten
- 1 cup orange juice
- 1 tablespoon orange rind
- 1⁄3 cup salad oil
directions
- Preheat oven to 400ºF.
- Sift together the flour, sugar, baking powder, salt and soda.
- Stir in Grape Nuts.
- Combine eggs, orange juice, orange peel and oil.
- Add to dry ingredients all at once.
- Stir just until moistened.
- Fill greased muffin pans 2/3 full.
- Bake at 400ºF for 20 to 25 minutes.

Tasty and good! Easy to put together. I used whole wheat flour, as I almost always do. The Grape Nuts almost disappeared; they just left a subtle texture which was very pleasant. With the Grape Nuts, total calories would be about 206 per muffin. Next time I will bake these at 375°F as the muffins were a little overdone after 20 minutes at 400°F. Also, these must be eaten fresh - well-wrapped leftovers for next days' breakfast were quite dry - I think the Grape Nuts continue to suck moisture out of the rest of the muffin.
