  • 2 cups flour
  • 13 cup sugar
  • 1 teaspoon baking powder
  • 14 teaspoon salt
  • 12 teaspoon baking soda
  • 1 cup Grape-nuts cereal
  • 2 eggs, slightly beaten
  • 1 cup orange juice
  • 1 tablespoon orange rind
  • 13 cup salad oil

  • Preheat oven to 400ºF.
  • Sift together the flour, sugar, baking powder, salt and soda.
  • Stir in Grape Nuts.
  • Combine eggs, orange juice, orange peel and oil.
  • Add to dry ingredients all at once.
  • Stir just until moistened.
  • Fill greased muffin pans 2/3 full.
  • Bake at 400ºF for 20 to 25 minutes.

  1. Tasty and good! Easy to put together. I used whole wheat flour, as I almost always do. The Grape Nuts almost disappeared; they just left a subtle texture which was very pleasant. With the Grape Nuts, total calories would be about 206 per muffin. Next time I will bake these at 375°F as the muffins were a little overdone after 20 minutes at 400°F. Also, these must be eaten fresh - well-wrapped leftovers for next days' breakfast were quite dry - I think the Grape Nuts continue to suck moisture out of the rest of the muffin.
