Orange Date Cake

1 9x13 " pan
ingredients
- 1 cup boiling water
- 1 cup dates, finely chopped
- 1 tablespoon orange rind, grated
- 1 1⁄2 cups sugar
- 3⁄4 cup shortening
- 3 eggs, separated
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄3 cup orange juice
- 1⁄4 cup cold water
directions
- pour boiling water over dates and rind in bowl.
- let stand.
- Cream sugar,shortening, and egg yolks thoroughly.
- Stir dry ingredients together.
- Mix juice and water together.
- Add dry ingredients alternately with juice and water mixture.
- Stir date mixture and blend into batter.
- Beat egg whites until stiff.
- Fold into batter.
- Spread into lightly greased and floured 9x13 inch pan.
- Bake at 350 for 50 to 55 minutes.
- Cool in pan.
- Ice with orange butter icing.
