- 125 g plain flour
- 7 1⁄2 ml baking powder
- 1 egg
- 50 g caster sugar
- 125 ml milk
- 50 g butter, melted
- 1 orange, zest of, grated
- 50 g chocolate chips
- 2 1⁄2 ml cinnamon
- 25 g cocoa powder
directions
- Sift the flour and baking powder together into a bowl.
- Then stir in remaining ingredients mixing thoroughly.
- Carefully spoon mixture into each muffin cup.
- Bake in a preheated oven at 400°F for 15-20 minutes.

i made these and love them!! i substituted wholewheat flour for more fibre and i used egg subsitute. they are such a great rich treat. i also subsituted low-foat chocolate pudding instead of the butter and it makes them lower and fat and richer tasting. the only problem i have with the recipe is that the measurements for a lot of things are in grams and it make things more work to have to weigh everything,so heres the converted recipe with my changes: 18 muffins · 1 ½ cups whole wheat flour · 1 tsp baking powder · 100 ml of egg subsititute (or 2 eggs) · 7 tbsp (105ml) of sugar · 1 cup skim milk · 1 99ml Healthy Choice chocolate pudding cup · grated rind of 2 oranges · ½ cup chocolate chips (semi-sweet) · 1 tsp cinnamon · 2/3 cup cocoa powder 1. Preheat oven to 400 degrees (F) 2. sift together flour and baking powder 3. stir in remaining ingredients 4. spoon into 18 muffin cups 5. bake for 10-12 minutes

I used Recipezaar's converter to convert to US measurements, but then I tweaked it to make the measuring easier. They came out a little flat, maybe because I did that. But they were moist and delicious. You could taste the chocolate, orange, and cinnamon in just the right proportions. It was hard to get the lumps out of the batter, so I recommend an electric mixture or wire whisk for the wet part. The flavor definitely deserves 5 stars, though.
