- 1 1⁄2 cups cocoa (plus more for dusting)
- 3 cups all-purpose flour
- 3 cups granulated sugar
- 1 tablespoon baking soda
- 1 1⁄2 teaspoons baking powder
- 1 1⁄2 teaspoons salt
- 3 large eggs, room temperature
- 1 1⁄2 cups warm water
- 1 1⁄2 cups buttermilk
- 3⁄4 cup vegetable oil
- 1 1⁄2 teaspoons vanilla extract

- Preheat oven to 350°F Grease a 9 x 13 pan then line with parchment paper. Grease paper then dust with cocoa, tapping out any excess.
- Whisk together cocoa, flour, sugar, baking soda, baking powder and salt in a mixing bowl.
- Add the eggs, the water, the buttermilk, the oil and the vanilla. With an electric mixer on low speed, beat until the batter is smooth, about 3 minutes.
- Pour into the pan and bake until a tester comes out clean, between 60 and 70 minutes. Cool the pan on a rack for 20 minutes, then turn cake out on the rack to cool completely.
- **Make your own buttermilk by using 1-1/2 cups of milk with 1 tablespoon of either lemon juice or white vinegar. Let it sit for several minutes before using.**.
- Cupcakes: Makes approximately 40 cupcakes. Fill cups 3/4 full then bake at 350 F for approximately 15 - 18 minutes, or until a cake tester comes out clean. I only bake 2 pans at a time, and rotate them halfway through the baking time.
