Old Fashioned Oatmeal With Bananas and Raisins

- 315.37 ml water
- 1.23 ml salt (optional)
- 157.80 ml old-fashioned oatmeal
- 1 banana, peeled and sliced
- 29.58 ml raisins or 29.58 ml dried cranberries
- 14.79 ml brown sugar
- milk (soymilk, half and half, rice milk)
directions
- In small pot bring the water and salt to boil.
- Slowly stir in the *oatmeal, using a fork to break up any lumps. Once boiling has subsided, cover pan and cook on medium-low for 10-12 minutes.
- Remove pan from heating element and let sit, covered, for an additional 2-3 minutes.
- Transfer oatmeal to serving bowl and top with the sliced bananas, raisins and brown sugar. Serve with milk or milk substitute on the side if you wish.
- *NOTE: for creamier consistency, add the oatmeal {{before}} bringing water to the boil.
- Yield: 1 large serving or 2 small servings.

Tasty oatmeal breakfast. With significantly less cooking time and the same toppings, I used organic quick cooking oats, dark raisins and dark brown sugar, using the creamier consistency option. I had no milk but would serve it with rice milk another time. I would like to try this again with old-fashioned oats.

This produces a very creamy bowl of oats. I used the dried cranberries and made 1 1/2 servings for DH and I which was perfect. My oats were sticking a little at the end of 8 minutes. So I turned them off and allowed them to stand the 3 minutes. This has many possabilities like adding nuts, cinnamon, etc. I will use this cooking method again. Thanks.
