Another recipe that was passed down to me and looks like my daughters will someday take it with them because they LOVE it. (I haven't told them that pumpkin is a vegetable.... shhhhh!)

  1. Mix dry ingredients together.
  2. In separate bowl, mix remaining ingredients together.
  3. Combine all just until moist.
  4. Pour into microwave-safe tube or loaf pan.
  5. Microwave at 50% for 9 minutes, then on high for 5 minutes.
